Breakfast Lentils

Introduction

I like to set this to simmer in the morning while I am getting ready for work. It is a nice change of pace from Oatmeal, is savory, delicious and is loaded with protein.
I like to set this to simmer in the morning while I am getting ready for work. It is a nice change of pace from Oatmeal, is savory, delicious and is loaded with protein.

Number of Servings: 2

Ingredients

    1/2 cup dried lentils
    2 cups, (1 can) Low Sodium Chicken Broth
    1/4 cup prepared salsa, (more or less to taste)
    2 cups fresh baby spinach

Directions

Add Lentils and Chicken Broth to sauce pan and bring it to a gentle boil.
Don't add the Salsa at this point as tomato products added too early can cause the skins of lentils, or any beans, to toughen)
Reduce heat immediately to gently simmer.
Simmer for 15-20 minutes until tender.
Stir in Salsa and Spinach and remove from heat. (The residual heat will wilt the spinach very nicely, but you can simmer another few minutes if you prefer)
Salt and pepper to taste.
