Vegan Granola Bars

Introduction

This is a granola bar recipe that I tweaked to be vegan and quick. It takes almost no time to prepare and the bars come out soft and chewy.

If you can't find Okara, which is used to add protein, just replace with Oats.

Number of Servings: 20

Ingredients

    2 cups Instant Oats Cereal
    1/3 cup Brown Sugar
    1/4 cup Okara
    1 cup Whole Wheat Flour
    3/4 tsp Salt
    2 tsp Cinnamon, ground
    1/2 cup Pecans or any other nut
    1/s cup Sunflower Seeds, raw
    1/2 cup dried cranberries or other dried fruit
    1/3 cup Maple Syrup, real if you can find it
    1/2 cup Applesauce, unsweetened
    1/3 cup banana, mashed
    2 tsp Vanilla extract

Directions

Preheat oven to 350

Mix all dry ingredients in a large bowl. Make sure the dried fruit is covered well so that it doesn't stick together in clumps.

Whisk together all wet ingredients in a small bowl.

Pour wet into dry and mix well. I use my hands because it is easier to get everything mixed well.

Put mixture into a sprayed or greased 9x13 pan and flatten out so that it is evenly spread across the pan. Bake for 25 minutes. It you like crunchier bars you can bake a little longer.

Let sit for 5-10 minutes then cut into 20 bars.
