2 c. almond milk
3/4 c. quinoa (uncooked)
1/4 c. sugar
1/4 tsp. salt
1 cinnamon stick
1/4 c. flour
Remove from heat and whisk in flour. Let cool a bit, then whisk in eggs one at a time, being careful not to let them scramble.
Return to heat and cook 5 minutes more over med. low flame. Mixture should be quite thick.
Pour into ramekins and chill before serving.
