Tarragon Chicken Salad

Ingredients

    12.5 oz canned chicken or boneless, skinless chicken breast halves
    1/4 cup finely chopped celery
    1 T Hellman's low fat canola mayonnaise
    2 T non fat Greek yogurt
    1/2 tablespoon Dijon mustard
    2 T finely chopped red onion
    2 T slivered almonds, lightly toasted (optional)
    1 tablespoons chopped fresh tarragon
    1/2 tablespoon lemon juice
    1/4 teaspoon ground black pepper
    serve on (optional)
    12 slices seeded rye or whole wheat bread
    6 romaine lettuce leaves
    2 tomatoes, sliced


Directions

In a medium bowl combine celery, mayonnaise, mustard, onion, almonds, tarragon, lemon juice and pepper and stir to blend.
Serves 2 hearty servings or 4 petite servings

I like the Sam's Club canned chicken as it has few added ingredients
