Brown Rice Salad

Introduction

This is a large recipe and is good for a family gathering. This is a large recipe and is good for a family gathering.
Number of Servings: 6

Ingredients

    3 cups cooked brown rice
    2 (10oz) cans tomatoes & Chiles, drained
    1 1/2 cup fresh broccoli flowerets
    1 1/2 cups fresh cauliflower flowerets
    1/2 cup chopped green onions
    1/3 cup olive oil
    4 tbsp. white wine vinegar
    1 tsp. italian seasoning
    1tsp. garlic powder

    additional ingredients that can be added:
    1 cup fresh mushrooms, sliced
    3/4 cup sliced pitted ripe olives

    Red wine vinegar can be substituted for White wine vinegar

Directions

Combine cooked brown rice, drained tomatoes and chiles, broccoli, cauliflower, and green onions. In a small bowl, combine remaining ingredients. Add to rice mixture and toss.
