Ingredients

    6 oz uncooked dried whole wheat spahetti, broken into thirds
    1/4 cup light butter
    2 cups small broccoli flowerets
    1 cup sliced fresh mushrooms
    1 1/2 cup 1% milk
    2 Tbsp flour
    8 oz 2% shredded cheddar cheese
    9 oz cooked chicken

Directions

Cook spaghetti according to package directions. Drain. Keep warm. Meanwhile, melt butter in 12 inch skillet until sizzling; add broccoli and mushrooms. Cook over medium heat, stirring occasionally, until vegetables are crispy tender (4 to 6 min.s). Remove vegetables from skillet.

Combine milk and flour in small bowl; stir until smooth. Add to same skillet. cook over medium-high heat, stirring constantly, until mixture comes to a full boil (2 to 3 min.s). Boil 1 minute. Reserve 1 cup cheese. Add remaining cheese; continue cooking, stirring constaantly, until cheese is melted (2 to 4 min.s).

Stir in hot cooked spagheti, broccoli, mushrooms and chcken pieces. Cook until heated through (2 to 3 min.s). Gently stir remaining cheese into hot mixture. Continue cooking until cheese just begins to melt. Makes 6 1-cup servings.
