2 cups all purpose flour
1 tbsp. brown sugar
1/4 tsp nu salt substitute
1/4 tsp salt
1/2 tsp baking soda
1 cup ( 8oz) reduced fat sour cream
2 tbsp olive oil
1/2 cup (your choice) shredded cheese
Coat 12 muffin cups or pan with cooking spray, bake at 375 for 15-18 minutes or until toothpick inserted in center of muffin comes out clean. Cool 5 minutes, remove from pan to a wire rack. Serve warm (or at room temperature)
Note: Using a ice cream scoop helps in the transfer to the muffin pan.
