Number of Servings: 12


    2 cups all purpose flour
    1 tbsp. brown sugar
    1/4 tsp nu salt substitute
    1/4 tsp salt
    1/2 tsp baking soda
    2 eggs
    1 cup ( 8oz) reduced fat sour cream
    2 tbsp olive oil
    1/2 cup (your choice) shredded cheese


In a small bowl combine flour,sugar,salt(s) and baking soda. In another small bowl combine eggs, sour cream and oil. Stir into dry ingredients until moistened. Fold in shredded cheese.

Coat 12 muffin cups or pan with cooking spray, bake at 375 for 15-18 minutes or until toothpick inserted in center of muffin comes out clean. Cool 5 minutes, remove from pan to a wire rack. Serve warm (or at room temperature)

Note: Using a ice cream scoop helps in the transfer to the muffin pan.
