Number of Servings: 12

Ingredients

    Salt, .1/4 tsp
    Baking Powder, 2 tsp
    4 Egg white
    Jams and preserves, sugar-free, 6 tbsp
    1/3 cups splenda,
    Unsweetened Apple Sauce, 1/4 cup
    *Fruit, Private Selection Berry Medley, 1 cup
    Trader Joe's Just Almond Meal, 2 cup
    Vanilla Extract, 2 tsp
    Water 1/2 cup


Directions

In a large bowl add two cups of almond meal, aka almond flour. Then add apple sauce, the equivalent of 4 eggs using liquid egg whites. Put in 2 tsp of baking powder and 1/4 tsp of salt (optional), as well as a 1/3 cup splenda, you can add more if you want a sweeter muffin. Add water and mix until ingredients and equally distributed. Add 1.5 cups of frozen berries into batter and fold in. Now fill 12 muffin tins with batter and top with 1 tsp of sugar free preserves.

Bake muffins at 350 for about 20 minutes. Makes 12 muffins.
