    For each sandwich use:
    1 Thomas English Muffin, Light, Multigrain
    1 Slice Alpine Lace Light Swiss Cheese
    1 Thin Slice Low fat Ham
    1/8 cup egg substitute or Eggbeaters
    Pam or no-stick cooking spray


If you are cooking more than one or two or if you do not have a toaster oven, preheat an oven to 500 degrees. For one or two sandwiches, you can bake your muffins with toaster set to max / high and toast for 3-4 minutes. Split muffins and place on baking pan or sheet. break corners off of swiss cheese and put middle on one side of muffin and corners to form a square on the other side of the muffin. Fold a slice of deli ham on one siide of each muffing. Bake in oven or toaster oven for 3-4 minutes. Meanwhile spray a small bowl for each serving with Pam and pour in egg substitute. Microwave each serving of egg on high for 70-80 seconds.
If you are preparing more than 1 or 2 sandwiches, scramble the eggbeaters in a no-stick pan on top of the stove. Remove toasted muffins to plates or serving plate and turn a serving of egg onto one muffin half and top with another muffin half.
