Introductionlemony roasted garlic hummus lemony roasted garlic hummus
olive oil about 1/4 cup
16 oz can chick peas(rinsed)
half head garlic
salt and pepper
2 tbsp dried parsley
1/3 c chicken stock
juice of 1 lemon
Cut top off garlic head and brush with a bit of olive oil. Roast in oven until cloves come out of skins with a sqeeze about 30 min.
In a blender combine chickpeas all ingredients except oil. Start to blend adding oil 1 tablesppon at a time until well blended. Wait a few seconds in between adding tablespoons of oil so that it is well combined into mixture before adding additional tablespoon.
Enjoy with pita wedges, veggies, or crackers.
