Lynn's Cheesy Marinara with Sauce w/Turkey Sausage

Introduction

I've tweaked my mother's recipe a bit to cut down on fat and sugar, but it's still delicious. Each serving includes 1 link of lean hot Italian turkey sausage, but feel free to use a meat of your choice, or replace with vegetables (mushrooms, zucchini, spinach, etc). If you're diabetic or watching your carbs, Dreamfields pasta is only 5 g a serving.

If you save parmesan rinds, you can omit the grated parmesan and put the rinds in when you add the tomatoes.

Ingredients

    2 med onions, chopped
    2-4 cloves garlic, minced
    1 T EVOO
    2 28-oz cans diced tomatoes, low sodium
    1 can tomato paste
    1-2 cups water
    1/4 t pepper
    1/2 t nutmeg
    1/2 t allspice
    1 T oregano
    1 T basil
    1 T ground fennel
    1 packet Splenda (you can use 1 T sugar)
    1/2 C chopped parsley
    1/2 C grated parmesan cheese (the real stuff)
    10 links lean hot Italian sausage

Directions

Cook sausage any way you like: take out of the casings and pan fry, pan fry whole and then halve (what I do), or bake/roast in the oven. If frying, add a small amount of oil (1 t) if needed. Drain on paper towels.

Saute onions and garlic in olive oil til tender. Add the tomatoes, paste, spices and water. Water depends on how long you plan to cook this. Optimally it's 2 cups of water for 3 hours of a bare simmer. For 1 hour, use 1/2-1 cup water.

In the last half hour of cooking, add parsley, sausage and grated cheese. Stir frequently at first so cheese doesn't stick to bottom of pot and burn.

This sauce is meant to reduce and become very thick. It should yield 9-10 servings: 1 C. with sausage meat or 1/2 C sauce per serving plus 1 sausage link. Freezes very well.
