Orzo with Brie and Veggies

Ingredients

    2/3 cup dry Orzo
    1 clove garlic, finely minced
    1/3 large red bell pepper, chopped
    1/2 zucchini, quartered and sliced
    3 cubic inches of Brie cheese
    Salt
    Pepper
    Lemon Juice

Directions

1. Bring a pot of salted water to a boil, add orzo. After 5 minutes, add zucchini. Continue to cook 3-5 minutes more.
2. In the meantime, cut brie into pieces and place in a bowl with peppers and minced garlic. When pasta is done, drain and immediately add to the cheese. Toss to melt cheese and coat pasta.
3. Season with salt and pepper to taste. Add the juice of a quarter of a lemon and serve.
