Lap-band Friendly: Ground chicken Kebab

Introduction

These are great on the grill and can be served with grilled vegetables and brown rice.

Make the meat mixture the night before or at least in the morning to allow the flavors to blend.

Number of Servings: 4

Ingredients

    1 pound Lean Ground Chicken
    1 large Onion grated or finely minced
    1 clove of garlic crushed
    1 large egg beaten
    2 teaspoons of salt
    1 teaspoon of pepper
    1 teaspoon of Turmeric

Directions

Mix the chicken, onions, garlic, egg, salt, pepper and turmeric in a large bowl. Cover and refrigerate. If possible do this the night before to let the flavors blend.

Here's the tricky part....
using metal kebab skewers form the meat around them into a long "sausage" like shape (I'll post pictures later)

Grill over medium high heat 5 minutes per side.

You can also cook these in the oven using the broiler set on the low setting. Same time applies, but check to make sure the meat isn't pink before serving.
