Simple and yummy ~ This is an easy fix for any meal. Because it is so fast to whip up, it is great for breakfast on a work morning. I like it just by itself, but it is also great on toast and is easy to eat on the run Simple and yummy ~ This is an easy fix for any meal. Because it is so fast to whip up, it is great for breakfast on a work morning. I like it just by itself, but it is also great on toast and is easy to eat on the run
Number of Servings: 4

Ingredients

    4 Lg eggs
    1 Tlbs water
    1 oz prosciutto, chopped
    1 cup raw spinach, torn
    1/2 oz shredded cheese
    1/2 tsp smoked paprika
    salt and pepper to taste
    1 Tbls Olive oil - Optional

Directions

Preheat oven to 350 degrees.
Heat olive oil in nonstick or cast iron oven proof skillet with lid.
Whisk eggs with water, add prosciutto and spinach, pour into heated skillet, sprinkle cheese and smoked paprika over top and leave on heat just until the bottom of the eggs has set.
Remove from heat, cover and put the skillet into the preheated oven for 10 minutes.
Remove when eggs are set. slice into 4 pcs and enjoy.
