Greek Feta Chicken

Number of Servings: 4

Ingredients

    2 large garlic cloves, crushed with press
    1 cup (or 6oz, since that is what most packaging comes in) lowfat Greek style plain yogurt
    1 t. oregano
    1/2 t. freshly ground black pepper
    4 natural boneless, skinless chicken breast halves
    1/3 cup feta cheese
    lemon juice to taste

Directions

mix yogurt, garlic, oregano and pepper. Add chicken and turn to coat. Cover and let stand at room temp for 30 minutes.

Meanwhile, preheat broiler with oven rack 6 inches from heat. Line large rimmed baking pan with foil. Place chicken in pan, smooth side down. Reserve marinade. Broil chicken 8 minutes; turn chicken over, then brush with reserved marinade. Discard any unused marinade.

Broil 3 minutes, Sprinkle chicken with cheese; broil 1 minute longer or until cheese softens, chicken loses its pink color throughout and internal temperature reaches 165F. Sere with lemon wedge/juice to squeeze over chicken.
