Pasta Fagiole

Introduction

Italian tomato and bean soup Italian tomato and bean soup
Number of Servings: 13

Ingredients

    1 jar Classico pasta sauce
    29 ounces diced tomatoes, no salt added
    1 onion
    1 cup green pepper
    1 cup celery
    1 cup carrots
    3.5 cups cannellini
    1 small can low salt V8

Directions

Saute vegetables in a large stock pot. Add tomato sauce and canned tomatoes when onions are translucent. Simmer for an hour then add 1/2 the beans and puree until smooth. Add remaining beans, V8 and water as needed. Simmer another hour.

Add cooked pasta and parmesan to each serving (calorie count not included).

Makes 13 one-cup servings.
