Chicken Salad

Introduction

This is the salad that I made from the Rotisserie Chicken left overs. I put it on bread for a sandwich, but it would also be good on a bed of lettuce. Number of Servings: 8

Ingredients

    Leftover Rotisserie Chicken (for me this was half a breast and both thighs)
    Handful of grapes (about 8 for me) cut in half
    1/2 granny smith tart green apple, cut into small chunks
    Approximately 5 tbsp mayo (I used Kraft Light)
    A squirt of mustard (approximately 1.5 tsp)

Directions

shred the chicken into small pieces into a small bowl. Add the grapes and apple pieces. Add the mayo and mustard and stir until well combined.

Refrigerate until chilled. Makes approximately 8 servings.
