Pumpkin Bread

Ingredients

    2 1/4 cups granulated sugar
    3/4 cup brown sugar (packed)
    1 cup canola oil
    3 eggs
    2 cups pumpkin
    3 cups flour
    1 tsp. cinnamon
    1 tsp. cloves
    1 tsp. nutmeg
    1 tsp. salt
    1 1/2 tsp. baking powder

Directions

Mix together sugars and oil. Add eggs and pumpkin.

Sift together flour, spices, salt and baking powder. Add to pumpkin mixture and mix until dry ingredients are incorporated. Do not over mix.


Fill two regular sized bread loafs to 1/2 full with mixture. Bake in a 350 oven for 60 minutes or until a scewer inserted into middle of loaves comes out clean.


Makes 2 loaves and 24 servings (12 servings per loaf).
