Blueberry Chocolate Chip Muffins

Introduction

These are a nice breakfast treat. We also have them for dessert. We love the way the semi sweet chocolate chips compliment the fresh berry flavor. Serve with fresh fruit. Ingredients

    Muffins:

    1.5 c. whole wheat flour
    1.5 c. all-purpose flour
    1.5 c. sugar
    4 tsp. baking powder
    1 tsp. salt
    1/3 c. corn oil
    1/3 c. applesauce
    2/3 c. egg white substitute
    2/3 c. milk, 1%
    2 c. fresh blueberries
    1 c. chocolate chips

    Topping:
    1/2 c. sugar
    1/3 c. all purpose flour
    1/4 c. butter, cubed
    1.5 Tbsp. cinnamon

Directions

Preheat oven to 400 degrees. Line muffin tin with muffin liners, or grease well.

Combine flour, sugar, salt and baking powder. In a 2 cup measure, pour oil, applesauce, egg substitute and milk. Add to dry ingredients and mix. Fold in fresh blueberries and chocolate chips. Pour generous amount into muffin tins.

In a separate bowl, make crumb topping by putting sugar, flour, cinnamon and cubed butter and mixing/mashing with a fork. Using a spoon, cover muffin tins with crumb topping.

Bake for 20-25 minutes, until toothpick comes out clean.

Makes 20 large muffins.
