Potatos and cabbage

Number of Servings: 6

Ingredients

    8 medium potatoes, diced
    1 large head of cabbage, shredded, or sliced extremely thin
    oil for frying
    1 tsp paprika, or chili powder if you want it hot
    2 tbls mustard seed
    1tsp turmeric
    1 tsp salt
    1 tbsp coriander
    lemon juice to sprinkle over cooked veggies

Directions

pre-heat oven to 400 degrees. put enough oil to coat bottom of a roasting pan. heat in oven, then add mustard, paprika and turmeric. heat until mustard seeds start to crackle and pop, then add potatoes. stir to coat, then cook about 10 minutes. add cabbage and stir again. if it's drying out, add 1/4 c water to keep from sticking to bottom. cover and cook til poatoes are tender, then add salt, coriander, and stir. finally, sprinkle lemon juice over top, stir and serve.
