Introduction

This is a very basic recipe. I am trying to go as low sodium and low calorie as possible. The next person may find it bland, but feel free to add other spices if you wish. Number of Servings: 6

Ingredients

    2 cups green peppers, sliced
    2 cups onions, sliced
    2 cups green beans
    2 cups mushrooms, sliced
    3 T fresh cilantro, chopped
    1 T garlic powder
    1/4 t ground black pepper
    1/2 t paprika
    1 T Extra virgin olive oil

Directions

1. Preheat oven to 400 degrees.
2. Add oil and spices to baking dish and stir. (I use a Pyrex)
3. Add vegetables and toss.
4. Bake for 30 minutes, stirring half way through.

Makes 6 3/4 cup servings
