Introduction
I prepare in small loaves so i can freeze individual loaves for later. ...the applesauce lightens the meat load without affecting the flavor or the texture! Ingredients

2 lbs. ground round
1/2 cup chopped onion
1 cup unsweetened applesauce
1 cup quick oatmeal cereal (unflavored, unsweetened)
4 slices 35 calorie bread
1/4 cup ketchup
2 eggs
Salt Sense & pepper
Directions
Combine all ingredients until well mixed.
Shape into 6 loaves.
Bake at 350 degrees F for 1 hour.
12 servings.

I used ground turkey instead of beef & left out the ketchup. I calculated this w/ extra lean beef & no ketchup & it came out to 237 cal. (which is still great), but w/ 1 lb. 99% & one lb. 93% turkey & no ketchup it was 137 cal. per serving. (for anyone who cares). Also less fat & more protein. :) - 10/27/07

I wasn't sure how my family would like this since my husband is a meatloaf snob & my daughter hates meatloaf. I was pleasantly surprised that they BOTH liked it. My daughter even commented how she thought the applesauce made the difference. I made it in muffin tins. Perfect for 12 portions. - 1/17/10
