1 lb lean ground turkey
1 small onion, chopped
1 clove garlic, minced
1 can reduced sodium kidney beans
1 can reduced sodium tomato soup
1 1/2 cups diced or stewed tomatoes with juice (I used diced tomatoes & chilies for more kick)
3/4 cup raw whole wheat macaroni
1/4 cup water
2 tsp chili powder
1 tsp cumin
1 cup Kraft 2% Milk Shredded Cheddar Cheese
Stir in the rest of the ingredients except for the cheese. Bring to a boil. Reduce heat. Cover and cook for 10 minutes. Stir. Cover and cook for another 10 minutes until macaroni is tender but firm.
Sprinkle with cheese, stir to melt.
Makes 6, one-cup servings.
*This meal freezes and re-heats well into individual servings. Each serving takes 5-6 minutes from frozen to reheat in the microwave.
