Crustless Spinach, Onion and Feta Quiche- low sodium

Number of Servings: 6

Ingredients

    1 medium onion, diced
    6 oz fresh baby spinach
    2 large egggs and 2 egg whites
    1/2 cup all purpose flour
    1/2 tsp Hain sodium free baking powder
    1/4 tsp No Salt
    pinch of cayenne pepper
    1 1/3 cup skim milk
    4 oz goat cheese

Directions

Preheat oven to 400F.
Lightly grease a 10 inch quiche pan
Saute diced onion in vegetable oil over medium high heat until translucent. Add fresh spinach and cook until wilted. Cool for 5 minutes.
Whisk together eggs, flour, baking powder and salt. Whisk in milk then stir in spinach-onion mixture.
Pour into prepared pan. Top with got cheese.
Bake for 25 minutes until center is set.
Set for 5 minutes then slice and serve.
