5 large eggs
1/4 red bell pepper, medium
1/4 Yellow bell Pepper medium
1/4 package Spinach, frozen
1 tsp Olive Oil, Extra Virgin
saute spinach and finely chopped bell peppers onolive oil in a large pan, add eggs, salt to taste, mix well, let cook on low for5 minutes, flip over and let cook for 5 more minutes.
