Introduction

We eat this every New Year's Day for luck, but this is also wonderful in an egg white omelet with some Laughing Cow light chipotle flavored cheese! We eat this every New Year's Day for luck, but this is also wonderful in an egg white omelet with some Laughing Cow light chipotle flavored cheese!
Number of Servings: 12

Ingredients

    15 oz. can black eyed peas
    2 cloves garlic, minced
    1/4 t cumin
    14 1/2 oz. can petite diced tomatoes, undrained
    1 c. chopped onion
    1 6 oz. package canadian bacon, chopped
    1 T finely chopped jalapeno
    1/4 t. pepper

Directions

Spray a large skillet with non-stick spray and heat over medium heat. Add onion, bacon and garlic, saute 5 minutes. Stir in cumin, pepper, peas and tomatoes, bring to a boil. Remove from heat and stir in jalapeno. Chill 1-8 hours (or overnight) and serve at room temperature.

Makes about 12 1/3 cup servings.
