Introduction

Number of Servings: 8

Ingredients

    2 eggs
    1 c. milk
    1 tbsp olive oil
    1/4 tsp salt
    1 1/2 c. white flour
    1 Tbsp butter (for greasing the pan)

Directions

* Add ingredients (except butter) in this order to your blender.
* Blend until smooth.
* heat pan on stove until butter melts and "dances", and then lower heat to medium (a five on my electric cooktop -- yours may vary)
* swipe the butter along the bottom of the pan
* pour some batter into the pan, and tilt the pan until you have a *thin* coating on the bottom of the pan. You may also enjoy creating "fingers" of batter this way -- it gets you crispy bits
* if the pan is the right temperature, it will probably take about 2-3 minutes on the first side before it's ready to flip, and 1-2 to minutes on the second side before it's done.
