1/3 cup Smart Balance 50/50 Butter Blend
1/2 cup Splenda
1/4 cup egg product
1/2 cup mashed ripe banana
1/2 tsp vanilla extract
1 cup all purpose flour
1 tsp baking powder
1/4 tsp salt
1/8 tsp baking soda
Cream butter and sugar together in a small bowl until light and fluffy. Beat in egg, banana and vanilla.
In a medium bowl, Combine flour, baking powder, salt and baking soda. Add the butter-banana mixture to the flour and mix well.
Coat baking sheets with cooking spray and drop by tablespoonfuls at 2 inches apart.
Bake at 350 degrees for 9 to 11 minutes until edges are lightly browned. Cool on wire racks.
Makes 28 cookies.
