Chicken, Leek & Sweet Potato RisottoSubmitted by: CROWNECAKES
Arborio / Risotto Rice (uncooked), 2 cup
Chicken Broth, 32 fl oz
White Wine, 8 fl oz
Leeks, 2 leek
Parmesan Cheese, grated, .333 cup
Olive Oil, 1 tbsp
Butter, salted, 2 tbsp
Sweet Potato [2 cups cubed]
combine broth and wine and bring to a simmer
in a separate pot, combine 1 tbsp of butter with olive oil and sautee leeks until golden
Add cubed chicken and cook until sealed.
Remove with slotted spoon and set aside.
Add rice and 1 cup of broth/wine mixture
when rice is translucent, add remaining broth and simmer until liquid is absorbed.
Add back chicken mixture
Take half the sweet potato and mash with 1 tbsp of butter - add to mixture.
Add cheese and stir.
Serve topped with remaining sweet potato and cracked pepper.
