Omlette Cups

Ingredients

    * Egg substitute, liquid (Egg Beaters), .75 cup
    * Egg, fresh, 2 large
    * Spinach, canned, .5 cup
    * CARL BUDDIG, Smoked Sliced Turkey, light and dark meat, .5 package
    * *Blue Bonnet Light Butter Stick, 2 tbsp
    * Milk, 1%, .75 cup
    * *Colby and Monterey Jack Cheese shredded, 0.5 cup

    * Parmesan Cheese, grated, .25 cup
    * Parsley, dried, 2 tbsp

Directions

Mix all ingredients except parm and parsley. Pour into greased muffin pan. Top with the Parmesan/parsley mix. Bake 15-18 minutes or until light brown. The spinach and cheese are optional ingredients I mixed in. Other ideas were 1/2 cup of sliced olives or tomatoes.
