Vegetable Soup-Homemade

Introduction

Bob's Red Mill soup mix is the base for this split pea soup with lots of fresh veggies! Bob's Red Mill soup mix is the base for this split pea soup with lots of fresh veggies!
Number of Servings: 8

Ingredients

    8 c water
    2 c Bob's Red Mill Vegi Soup Mix
    2 large carrots
    3 stalks of celery
    1 med onion
    1 Tbsp extra virgin olive oil
    3-4 cloves of garlic
    bay leaf
    salt and pepper to taste

Directions

Boil 8 cups of water. Add 2 cups of soup mix. Simmer for 30 minutes. While soup is cooking, saute onions and garlic in olive oil. After the 30 minutes, add garlic, onions, carrots, celery and bay leaf to soup. Simmer for 30 more minutes. Salt and pepper to taste.
