Salisbury Steak and Mushrooms

Number of Servings: 4

Ingredients

    1 lb. Turkey, Ground turkey, 93% lean
    1 Egg
    1/2 Onions, chopped fine
    7 Low Sodium Saltine Crackers, finely crushed
    1 tsp Ground Sage
    Fresh Pepper
    Cooking Spray
    1 tbsp. Margarine
    8 oz. Sliced fresh mushrooms
    2 tsp. Worcestershire Sauce
    3 Tbsp Unbleached All-Purpose Flour
    2 tbsp fresh chopped Parsley

Directions

1. Mix ground turkey, egg, onion, cracker crumbs, sage, and some fresh ground cracked pepper in a large bowl using your hands.
2. Divide into 4 equal portions and shape into oval patties about 1/2 inch thick.
3. Over medium heat spray non-stick pan with cooking spray. Brown the patties, about 4 mins each side. Transfer to plate.
4. Melt margarin in pan and cook mushrooms until slightly browned. Stir in the worcestershire sauce, pepper, be sure to scrape up the brown bits on the bottom.
5. Sprinkle in the flour and then stir in 2 1/2 cups hot water and simmer until thickened.
6. return patties and any juice from plate to the skillet. Simmer 2 mins. Sprinkle with parsley and serve.

Servings: 4
Suggestion: Serve this with some whole wheat egg noodles.
