Introduction

had something similar to this in Italy and it was very tasty.
You can add more olive oil if needed.

Number of Servings: 6

Ingredients

    1Lb small potatoes, peeled
    1 clove garlic ,peeled and thinly sliced
    3.5-4 oz Black olives , seeds removed
    2 bunches of Rucola leafs
    8 oz cherry tomatoes
    2 medium carrots peeled and finely sliced
    1 Tbsp ev olive oil ,salt and pepper to taste

Directions

serves 4 - 6. as a side i calculated this at 6 serv.
wash and peel potato, cut in halves,cook by steaming for apx.20 min (should be al dente)
Peel garlic and slice very thin
peel and finely slice carrots.
wash and peel tomatoes , cut into halves.
Wash and dry arugula.coarsy chop.
Heat oil in frying pan,add garlic and carrots , let brown then you add tomatoes,olives and cook for 3 min.Let cool.Then add potatoes,salt & pepper add arugula and blend all very carefully.
