Shrimp Pasta Bake

Introduction

This is a favorite for our Sunday School Christmas party and one of my family's faves. This is a favorite for our Sunday School Christmas party and one of my family's faves.
Number of Servings: 8

Ingredients

    1lb box of Penne pasta
    2 tsp dried basil leaves
    1 tsp dried oregano
    1 tsp olive oil
    1/2 cup of water
    1 1/2 lbs of medium shrimp (cleaned and peeled)
    1 can diced tomatoes
    1 can tomato sauce
    1 large onion chopped
    1 1/2 cups of mushroom slices/pieces
    2 cloves of minced garlic (more if desired)
    1 8oz bag of mozzeralla part skim cheese (shredded)
    Salt & pepper to taste

Directions

1. Boil pasta per box instructions drain and set aside.
2. Sautee onions, garlic and mushrooms in a dutch oven or large skillet with olive oil till softened.
3. Add tomato sauce, diced tomatoes, water, spices, shrimp and allow to simmer a 10 minutes or so heating thoroughly. Stir frequently. Salt and pepper to personal preference.

4. Coat a 13x9 casserole dish or aluminum pan with non-stick spray.
5. Add pasta to mixture, remove from heat and blend well.
6. Pour contents into the casserole dish. Spread out evenly and top with mozzeralla cheese.
7. Bake uncovered for 30 minutes or before top begins to brown.

Serves 10.
