Couscous with dates and pistachios

Number of Servings: 4

Ingredients

    2 Tbsp. unsalted butter
    1 cup whole-wheat couscous
    3/4 cup water
    1/2 cup low-sodium chicken broth
    1/2 tsp. salt
    Ground black pepper
    1 Tbsp. freshly ground ginger
    1/2 tsp. ground cardamom
    1/4 cup chopped dates
    1/4 cup chopped toasted pistachio nuts
    2 Tbsp. chopped fresh cilantro leaves
    1-2 Tbsp. fresh lemon juice

Directions

Heat butter in medium saucepan over medium-high heat. When foaming subsides, add couscous, ginger, cardamom and dates and cook, stirring frequently, until grains are just beginning to brown, about 5 minutes. Add water, broth and salt; stir briefly to combine, cover and remove pan from heat. Let stand until grains are tender, about 7 minutes, Uncover and fluff with fork. Stir in pistachios, cilantro and lemon juice, season to taste with pepper and serve.

Serves 4 as a side dish.
