Easy Taco Soup

Introduction

This is SO EASY and SO GOOD! If you do like I do, and keep 1# packages of pre-browned lean ground beef in the freezer, this is literally an "open and dump it in" recipe, that is ready in no time. You can spice it up as much as you like by using spicier taco seasoning mix, and adding extra chili pepper and cumin, if desired. I love to serve it with Jiffy cornbread, that I add a can of creamed corn to before baking (per package directions). This is SO EASY and SO GOOD! Ingredients

    1/4 c diced onion
    1 # lean ground beef (turkey works great, too!)
    1 can each of: black beans, dark red kidney beans, chili beans, whole kernel yellow corn, diced tomatoes.
    1 can of water (you may add more or less, depending on desired consistency)
    1 packet of ranch salad dressing mix
    1 packet of taco seasoning

Directions

Makes 12 "bowl-sized" servings.

In a large stock-pot, brown 1 pound of lean ground beef with 1/4 cup chopped onion. Drain all fat. Add 3 cans of beans, 1 can of corn, 1 can of diced tomatoes, and 1 can of water...do NOT rinse or drain ingredients before adding. Stir in 1 packet, each, ranch dressing mix and taco seasoning mix. Bring to a boil, then reduce to simmer for 20-30 minutes.

You may top with sour cream, shredded cheese, serve with corn bread or tortillas.
