Beef Fried Rice

    3.5 cups cooked brown rice, cooled
    1 pound lean beef, cut into bite-sized pieces
    3 tbsp. vegetable oil
    1 cup diced green peppers
    1 cup diced carrot
    1/2 cup green onion diced
    1 clove garlic
    1 tbsp. sesame oil
    2 tbsp. rice wine vinegar
    3 tbsp. soy sauce
    2 eggs


1. Cook beef in 1 tbsp oil. Set aside.
2. Cook carrots and peppers in 1 tbsp oil. Set aside with beef.
3. Cook onions and garlic in 1 tbsp. oil. Add rice. Cook rice until brown.
4. Make well in center of pan. Crack eggs into well and soft scramble. Mix into rice.
5. Add in beef and vegetables. Remove from heat.
6. Stir in sesame oil, soy sauce, and rice wine vinegar.
