2 Tbsp Olive Oil
1 block extra firm tofu, drained
3 Hi fiber Lo Carb Tortillas, in strips
1/2 Green Bell Pepper, diced
1 Yellow Bell Pepper, diced
1 onion, diced
5 Cherry Tomatoes, diced
Chili Powder, Garlic, Salt, Black Pepper to taste
Saute veggies for 3 minutes.
Add Tortilla strips and cook for 3 minutes.
Add tofu and spices, cook for 3 minutes breaking up tofu with a spoon.
Makes 4, 1 cup, servings.
