South Beach Breakfast Egg Muffies

Introduction

Keep these in freezer and heat up daily for great protein rich low carb breakfast. Keep these in freezer and heat up daily for great protein rich low carb breakfast.
Number of Servings: 36

Ingredients

    32 oz Egg Beaters
    4-6 Additional Egg Whites
    1 lg red pepper chopped
    1 lg green pepper chopped
    3 small or one large onion chopped
    10 oz of frozen spinach thawed and drained
    4 Tbls Worcstershire Sauce
    3 Tbls Dry Mustard
    1 1/2 C Shredded Cheddar Cheese (light if you can get it)

Directions

Fully drain spinach eliminate as much water as possible. Chop veggies fine. Combine all ingreedients well with egg mixture and put in muffin cups to bake at 350 degree oven. Cool and freeze excess. Heat in microwave when ready to use.
