Fake potato soup (with Cauliflower) Like Olive Garden's

Introduction

Creamy and delicious! Full of flavor! Reminds me of the Zuppa Toscana they serve at Olive Garden. One could make it less fatening and have fewer calories with a healthier meat choice, but I love the flavor of the itallian sausage! Creamy and delicious! Full of flavor! Number of Servings: 10

Ingredients

    6 cups of frozen or fresh cauliflower (this is approximate. I usually use one frozen bag -12oz and one whole head of fresh cauliflower)
    Enough water to cover
    1 yellow onion
    2 TBSP minced garlic
    2 chicken bouillion cubes
    1 tube of pork sausage (itallian style is good) cooked and drained
    1 med to large russet potato washed sliced to 1/4 inch or thinner - skin on
    3/4 cup 1% milk
    Approx 2 cups chopped fresh kale

Directions

Place cauliflower in pot and add enough water to cover. Add the bouillion cubes, chopped yellow onion and garlic. Bring to boil and cook at boiling for 30 minutes or until cauliflower is soft. Begin to pan cook the sausage and drain the grease and blot with paper towel - set aside. Then either blend the soup in small batches in a blender or mash with potato masher in the pot (depending on how smooth you like your soup). After all is blended place the sliced potato in and add the cooked sausage. Place back on heat to cook for 10 minutes or until the potato is soft. Add the kale and enjoy!
