Spicy chicken spaghetti with sun dried tomatoes and garlic

Introduction

Hot and tangy sauce with a bold garlic and sun dried tomato flavor with tender chicken breast and spaghetti. Adapted from Chef Meg's Linguine with spicy shrimp sauce recipe. Number of Servings: 4

Ingredients

    Chicken - 1 pound - chopped into 1 inch strips
    spaghetti - 8 oz
    olive oil - 1.5 tbsp
    garlic - 4-5 cloves chopped coarsely
    sun dried tomatoes - 0.5 cup - chopped
    crushed tomato can - 15 oz
    chilli flakes - 0.5 to 1 tbsp
    1 oz white wine (I used red wine )
    1/4 tsp of each dried basil, oregano, parsley

Directions

heat oil
add garlic and chilli flakes
toast till light brown on low flame
add sun dried tomatoes stir for 3 min
add crushed tomatoes
cook on low flame for 15-20 min, stirring ocassionally
add wine and some water
stir and let simmer.
add pepper and salt
add chicken pieces and dried spices
let simmer on medium until chicken is cooked
Cook pasta in boiling water without salt. add some of the pasta water to sauce
stir and serve 1/2 cup pasta + 1/2 cup sauce + 3 oz chicken for each serving

    a tip- you can make the sauce with just 4 oz chicken ,eat all the chicken and freeze the rest of the sauce (3 servings) and cook it with a different kind of protein for variety
