Ingredients

2 tsb olive oil
1 large onion, peeled and chopped
1 tsp kosher salt
2 tsp black pepper
5 cloves garlic, peeled and diced
1 carrot, peeled and chopped
2 28oz cans peeled tomatoes
7 bay leaves
4 tsp dried basil
3 tsp dried oregano
.25 tsp crushed red pepper flakes
Directions
Yields about 60 oz of sauce
Heat olive oil over medium high heat
Add chopped onion and brown
Add salt and pepper
Add garlic and cook about a minute
Add carrot and cook until there is a need to deglaze
Add the tomatoes including the liquid and deglaze the pan'
Increase heat to high and bring to a boil
Once boiling, stir and reduce to a simmer
Add remaining spices and cook for about forty five minutes to an hour until reduced to taste
Remove from heat and remove bay leaves
Blend with an immersion blender until smooth
Allow to cool and store
Will store in the refrigerator for about a week or freezes well too
