Introduction

Break open your own packet and breathe in the heavenly aroma of fresh herbs and spices delicately balanced to allow for this mild fish to shine through.

Ingredients

    2 tilapia fillets
    Olive oil spray
    1/2 t Dijon Mustard
    1 clove garlic, minced
    1/2 t Dried tarragon, dried chives
    pinch Sea Salt crystals
    2 sheets vegetable parchment paper

Directions

Preheat oven to 425 degrees.
Wash fillets and pat dry. Take a piece of parchment paper, fold in half and place open on a baking sheet. Spray lightly with Olive oil. Place a fillet on half. Repeat the process with the other fillet.
Spread half the dijon mustard on top of each fillet, sprinkle garlic,tarragon, chives, and sea salt crystal on the fillets.

Now close the parchment. Fold it up and around the fish, crimping along the edge (like you would a fold a stuffed crust).Check to make sure it sealedby looking to see if it unfolded - if so, press harder to seal well.
Place cookie sheet in the oven and cook for 10 minutes per inch or until the parchment is golden brown. Place the packets directly on serving plates and open carefully as they've been steaming inside. Makes 2 servings
