Chocolate-Amaretto Silk Pie

Introduction

Unbelievably rich! Not good for losing weight, but a fabulous treat. For a change from Amaretto, you can use Kahlua or for a plain chocolate taste, use Vanilla. Unbelievably rich! Number of Servings: 12

Ingredients

    Pie Crust:
    1 1/3 c. flour (or a bit less)
    1/2 c. Crisco shortening
    1 t. salt
    5 T cold water

    Pie Filling:
    1 1/3 c. butter (lightly salted)
    1 1/2 c. sugar
    1/2 c. cocoa powder (unsweetened)
    2 T Amaretto
    4 eggs

Directions

For pie crust:
1) Using pastry blender or fork, blend salt, flour, and shortening. Gradually add water and toss gently. Roll out on floured surface, then place in deep pie dish.

2) Prick dough with fork, then bake 15 minutes at 425 degrees. Cool.

For filling:
1) Melt 1/3 c. butter in saucepan. Stir in cocoa.

2) Cream together 1 c. butter, sugar, and Amaretto. Then add in cocoa mixture.

3) Beat in eggs, one at a time, BEATING 3 MINUTES after each addition. Be sure sugar is completely dissolved.

4) Pour into crust and chill 4 hours.

Makes 12 servings.
