1 c red lentils, rinsed
4 c water
1 tsp salt
3 tbsp olive oil
1/2 c. onion
3 cloves garlic, diced fine
1 jalapeno pepper, seeds and ribs removed, diced very fine
1 inch piece of ginger, peeled and diced fine
2 tbsp cumin
2 tbsp coriander
1 tsp cayenne
1 tbsp turmeric
Meanwhile, saute ginger, onion, and jalapeno in olive oil until soft and golden brown, about 15 min. Add spices and cook 30 seconds more. Add to lentils.
Serve in bowls with lemon wedges. The lemon really perks up all the flavors.
