Quick Feta Veggie Scrambler

Introduction

A nice way to clean out the frig and fill up your belly. I had peppers and onions on hand, but feel free to use other veggies, mushrooms, etc. A nice way to clean out the frig and fill up your belly. I had peppers and onions on hand, but feel free to use other veggies, mushrooms, etc.
Number of Servings: 1

Ingredients

    1 egg white
    1 whole egg
    2 tbsp diced green peppers
    2 tbsp diced onions
    dash of dried dill weed
    2 tbsp crumbled feta cheese
    1-2 tbsp skim milk

Directions

Spray small saute pan with non-cooking spray. Saute peppers and onions to desired doneness.

In small bowl, combine egg, egg white, and skim milk. Using a fork to mix well.

When onions & peppers are cooked, add egg mixture to pan. Using spatula, scrape pan bottom and sides often to ensure that eggs are not sticking and burning.

About halfway through cooking, sprinkle some dill weed and feta cheese onto the scramble. Continue scraping pan until the eggs are completely cooked.
