Azorean Spiced Beef Stew

Introduction

Adapted from Stephanie O'Dea's "Make It Fast, Cook It Slow" - addition of potato kugel is my own.

You can do this without the kugel mix - use 2 potatoes diced in the stew in lieu of.

Number of Servings: 6

Ingredients

    1 lb beef stew meat
    2 cups low sodium beef broth
    1 cup water
    1 cup red wine
    1 cup cherry tomatoes, cut into quarters
    1 cut baby carrots
    1/2 red onion, diced
    6 cloves garlic, chopped
    2 tsp kosher salt
    1 tbsp red pepper flakes
    1 tsp allspice
    1 tsp cumin
    2 cinnamon sticks
    1 bay leaf
    1 Manischewitz Potato Kugel Mix, prepared

Directions

Throw all of the elements for the stew into a large crock (except the kugel mix if you're using - if you want to use diced potatoes, add them now)

Cover and cook on low 8-10 hours, or on high 6-8 hours.

If you are using the kugel mix, prepare the mix as directed and pour on top of the stew 1-2 hours before serving to allow time to cook through. It will be like potato dumplings on the top of the soup. Remove cinnamon and bay leaf before adding the kugel topping. Do not stir once kugel has been added.

Once kugel is firm and cooked through, serve into 6 bowls.
