Ingredients

    * 2 lbs 96% lean ground beef
    * 1 onion, chopped
    * 1 Tbsp extra virgin olive oil
    * 2 cloves garlic, minced
    * 1 can pinto beans, drained
    * 1 can Great Northern beans, drained
    * 2 cans no-salt added diced tomatoes, drained
    * 1 Tbsp dried parsley
    * 2.5 Tbsp chili powder
    * 1 Tbsp salt (less if desired)
    * 1 tsp pepper
    * 1 tsp cumin
    * 1/4 tsp liquid smoke

Directions

Brown the ground beef, onions, and garlic in olive oil over medium-high heat. Drain off fat if desired (there shouldn't be much) and add all remaining ingredients. Bring to a simmer, then reduce the heat to low, cover, and simmer for 60 minutes. You can also uncover the pot for the last 10-15 minutes of cooking if you need to reduce the amount of liquid.

Serve with a piece of cornbread for a filling dinner.
