Cream of Chicken Gnocci Soup

Number of Servings: 10

Ingredients

    1 med sweet onion
    1 cup diced celery
    2 cloves garlic
    2 T olive Oil
    1 rotisserie chicken
    1 can sliced carrot
    1 T italian seasoning
    1 16 oz carton of half and half
    2 cups 2% milk
    2 32 oz cartons chicken broth
    1 17.5 pkg Gnocci (find in pasta isle with tortellini)
    1 cup raw spinich
    2 cloves or minced garlic

Directions

Saute onions, celery and garlic in olive oil until onions are clear.
Add half and half, chicken broth, chicken, carrots, milk, italian seasong, salt and pepper. Bring to boil.
Add gnocci and simmer for 10 minutes.
Add spinich anf simmer 10 more minutes.
You can thicken with some corn starch if you want.
