Lemon Chicken Noodle Soup

Introduction

The cut fideo is a mexican pasta used for "sopa seca" and is really inexpensive. It is found in most supermarkets in the ethnic foods section. Ingredients

    Chicken Breast, no skin, 14 ounces
    Olive Oil, 3 tbsp
    Butter, unsalted, 1 tbsp
    Pagasa Cut Fideo, 3.5 serving, 1 bag
    Celery, raw, 1.5 cup, diced
    Carrots, raw, 1.5 cup, chopped
    Onions, raw, 1.5 cup, chopped
    2 bay leaves
    Better Than Bouillon Chicken base 1 tbs
    Poultry seasoning, .5 tsp
    Basil, 5 leaves ( I use trader joe's frozen basil)
    Zest and juice of 1 lemon
    1-2 crushed garlic cloves
    Mushrooms, fresh, 8 oz, thinly sliced
    *Kosher salt, 2 tsp

Directions

- Preheat oven to 325 degrees
- Coat chicken breasts with 1 tsp salt, 2 tbs olive oil, and pepper
- Put chicken in oven and bake for 20-30 minutes, until cooked through
- Saute mushrooms in a stock pot, then set aside
- Add 1 tbs olive oil to pot and saute onion, carrots, and celery with poultry seasoning and salt
- Add chicken base, garlic, basil, bay leaves and mushrooms, and add 8-12 cups of water (depending on how thick you want it)
- Bring to a boil, and then simmer
- Then shred chicken breasts and add to pot with pasta
- Ten minutes later, add basil, lemon juice and zest, and then serve.
